
Farm to Table
Most restaurant kitchens work backwards from a fixed menu. We work forwards from whatever the farm hands over at seven in the morning.
Four rules the kitchen actually works to, rather than four things we would like to be true.
Harvest-led
The menu is written after the morning harvest, not before it. What peaked overnight leads the meal.
Whole-crop cooking
Leaves, stalks, skins and tops are all used. Anything genuinely unusable goes to compost the same day.
Named producers
What we cannot grow — grain, some dairy, coffee — comes from named growers we can point to on a map.
Preserving the glut
Surplus is fermented, cured, bottled and dried, so August keeps feeding the kitchen well into winter.

The Long Table
One table, one seating, one menu decided by whatever the farm gave up that morning.
Dinner is served at a single long table under the pavilion. There is no à la carte and no choice of dishes — the kitchen cooks the harvest and everyone eats together. It is the most sociable meal on the estate and, for a lot of guests, the reason they come back.

The Orchard Kitchen
Breakfast and lunch, served slowly, in the shade of the citrus grove.
Breakfast runs long here on purpose. Bread from the estate oven, fruit picked within sight of the table, eggs from birds you can walk out and meet. Lunch is lighter and mostly cold, built from the morning’s surplus.

The Fire Meadow
Twice-weekly open fire in the upper meadow, food cooked over the flame.
No programme, no seating plan, no set finish. Dishes come off the fire in stages through the evening and people drift between the fire and the dark. Blankets are provided and the path back is lit.
We cannot send you a menu in advance, which is a genuine inconvenience we accept. What we can tell you is roughly what the ground will be doing.
Spring
Wild garlic, asparagus, the first salad leaves, forced rhubarb.
Summer
Heirloom tomatoes, courgette flowers, stone fruit, soft herbs by the armful.
Autumn
Squash, brassicas, apples and quince, mushrooms from the old woodland.
Winter
Roots and alliums from store, preserved summer, bitter leaves and citrus.
Vegetarian and vegan menus are always available, and we handle allergies and intolerances routinely. Tell us in your booking enquiry so the kitchen can plan around the harvest rather than improvise around it.

Breakfast is included with every stay. Lunch and dinner can be added to your booking or arranged during your stay, subject to kitchen capacity.
